(a) Why does he shift the pH of the fresh milk from 6 to slightly alkaline?
(b) Why does this milk take a long time to set as curd?
Answer:
He shifts the pH of the fresh milk from 6 to alkaline so that in basic form it will not spoil easily.
This milk takes a long time to set as curd because the lactic acid produced reacts with the baking soda.

    b)the answer could also be that when the lactic acid reacts with the baking soda the bacterial actions{which take place when the pH is less than 5.5}are neutralized.

    If the acidity in the milk is not lowered, the milk proteins that is casein will tangle into a solid mass called curds. To reduce that eventuality fresh milk with a pH of 6 is made to last longer when the pH is shifted in favour of being alkaline. The milkman does just that by adding baking soda. Baking soda is NaHCO₃.

    Now if milk is left to sour that is if the acidity increases, it sets into curds easily as lactic acid bacteria thrives in an acidic medium. If the sample of milk has alkalinity more as, the lactobacillus will find it difficult to reproduce and work on milk proteins, thus unable to turn it into a tangled mass. So curd setting will get delayed.
